【菜品特色】这是一道可以在舌尖瞬间绽放清爽味蕾体验的夏日菜品。我用龙虾壳和桃子制作的龙虾浓汤作为这道菜的调汁,使其味蕾更加富有层次感。这道菜完美的诠释了我热衷于找寻世界上最优质的海鲜烹饪食材的风格。

--This is a decadent and refreshing summer dish. I use the Blue lobster from Brittany, my hometown. It’s really a good representation of my type of cuisine which really focus on the produces. Really good quality peaches and tomatoes paired with the beautiful sweet and crunchy meat of the blue lobster. As without a sauce it won’t be French food I use the shell of the lobster to make peach and lobster bisque, reduce to turn it into a dressing. This is a perfect seasonal dish for summer as it is the pick quality of those items.
